
Turkey Kofta
Kofta is a family of meatball or meatloaf dishes found in South Asian, Middle Eastern, Balkan, and Central Asian cuisine. Any meat can be used – lamb and beef seem to be most popular – but this recipe uses turkey.

For the Kofta
- 500g turkey mince
- 1 small onion, finely diced
- 2 garlic cloves
- 1 large egg white
- 2 tbsp chopped parsley
- 4 tbsp fresh bread crumbs
- Zest of one lemon
- 1 tsp chilli powder
- 1/2 tsp ground allspice
- 1/2 tsp ground cumin
- 1/2 tsp paprika
- Salt & pepper
For the dipping sauce
- 150g Greek yoghurt
- 1 tbsp tahini
- Juice of 1 lemon
Instructions
- Mix together all the dressing ingredients and place in the fridge until ready to use.
- Combine all the Kofta ingredients in a large bowl and mix until well blended.
- Divide the mixture evenly into 8.
- Use your hands to form the meat around the skewers.
- Heat a little oil in a pan and then cook the Kofta over a medium high heat, about 6 minutes on each side.
Notes
- You can also form these into meatballs (makes 16).
