Sunday Brunch Veggie Stacker

One of our favourite things to do during the school holidays is to go out for a late breakfast followed by a movie.  Breakfast menus usually have some really good choices for vegetarians and a new ‘Veggie Stacker’ on the menu caught my eye.  It was really really good so I decided to try and recreate it at home.

You could build your stacker on the bread (which is what they do in the restaurant version) but as I like to dip my bread in the runny egg yolk so I kept the bread on the side.  I also wanted to add some veggies so went for bed of ripped spinach leaves and diced sweet beetroot but you can use whatever veg or salad you have available.

I used 1/2 avocado mashed with a little black pepper and I drizzled over some balsamic glaze (after I took the photo – oops!)
