Moroccan Chickpea & Couscous Salad

A really quick and easy salad to make for a barbeque.  It goes great with grilled chicken or this Lemon Tuna Steak recipe.

  1. 170g giant couscous
  2. 40g raisins
  3. 300ml vegetable stock
  4. 3 tbsp olive oil
  5. 2 tbsp lemon juice
  6. 1 clove garlic, minced
  7. 1 tsp ground cumin
  8. 1 tsp ground coriander
  9. 1/2 tsp ground ginger
  10. 1 large carrot - peeled & grated
  11. 1/2 red pepper, diced
  12. 1/4 red onion, diced
  13. 150g chickpeas
  14. 2 tbsp fresh parsley, finely chopped
  1. Follow the packet instructions to cook the couscous in the vegetable stock.
  2. Whisk together the lemon juice, olive oil, garlic, spices and salt.
  3. Using a fork, 'fluff' up the couscous and separate the grains. Don't worry if it's still a bit sticky - once you've added the dressing the oil will prevent the grains sticking together.
  4. Stir in the carrot, red pepper, onion, chickpeas, raisins and parsley.
  5. Pour over the dressing and stir well to combine.
