Lemon Mug Cake

Dessert after dinner is usually reserved for the weekends, but sometimes, when I fancy something sweet I mix up a mug cake.  They are so quick to make; mix all the ingredients in mug, pop in the micro for two minutes and voila, a satisfying dessert made with healthy ingredients.  What’s not to love!  If you like this you might also like my chocolate mug cake recipe.

  1. 1 tbsp ground almonds
  2. 1 tbsp almond butter
  3. 1 tbsp honey
  4. Juice and zest of 1/2 lemon
  5. 1/2 tsp vanilla extract
  6. 1 egg
  1. Place all the ingredients in a bowl and mix well.
  2. Pour into a mug or ramekin and cook in the microwave on full power (800w) for 2 minutes.
  3. Serve with a spoonful of whipped cream/ice cream/whipped coconut cream/dollop of Greek yogurt.
