Lemon Mug Cake
Dessert after dinner is usually reserved for the weekends, but sometimes, when I fancy something sweet I mix up a mug cake. They are so quick to make; mix all the ingredients in mug, pop in the micro for two minutes and voila, a satisfying dessert made with healthy ingredients. What’s not to love! - 1 tbsp ground almonds
- 1 tbsp almond butter
- 1 tbsp honey
- Juice and zest of 1/2 lemon
- 1/2 tsp vanilla extract
- 1 egg
- Place all the ingredients in a bowl and mix well.
- Pour into a mug or ramekin and cook in the microwave on full power (800w) for 2 minutes.
- Serve with a spoonful of whipped cream/ice cream/whipped coconut cream/dollop of Greek yogurt.
