Curried Red Lentil Flatbread

This flatbread is a great accompaniment for soup or salad and also makes a great snack – either on its own or dipped in some hummus or pesto.

Ingredients
  1. 140g (3/4 cup) red lentils
  2. 125ml (1/2 cup) water
  3. 1 tsp medium curry powder
  4. 1/2 tsp salt
Instructions
  1. Soak the lentils in 185ml (3/4 cup) water for approx. 2 hours. They should absorb most of the water and plump up fairly quickly.
  2. Pre heat the oven to 190C (375F)
  3. Grease and line the bottom of an 8" cake tin or oven proof grill pan.
  4. Drain off any excess water from the lentils then add all the ingredients to your food processor or blender (I used my Nutribullet) and process until the batter is smooth.
  5. Pour the batter into the prepared tin, spread evenly and bake for 20-25 minutes until firm to the touch and the top is slightly cracked.
Notes
  1. Keep refrigerated for 2-3 days and serve at room temperature.
