Cherry, herb and pearl barley salad with halloumi

I’m very fortunate where I live to have access to fabulous locally grown produce and the other day I bought a huge bag of local cherries.  I then had to find some recipes to use them all before they turned!  I made these cherry & chocolate muffins, a frozen cherry & banana smoothie but this recipe was my favourite. 

The recipe was created by Ceri from Natural Kitchen Adventures.  I made a few small adjustments to the original recipe:

  • I left out the radishes (the supermarket had sold out)
  • I swapped basil for mint
  • I used regular cherries
  • I used a ready-made balsamic glaze
