Cherry, herb and pearl barley salad with halloumi
I’m very fortunate where I live to have access to fabulous locally grown produce and the other day I bought a huge bag of local cherries. I then had to find some recipes to use them all before they turned! I made these cherry & chocolate muffins, a frozen cherry & banana smoothie but this recipe was my favourite.
The recipe was created by Ceri from Natural Kitchen Adventures. I made a few small adjustments to the original recipe:
- I left out the radishes (the supermarket had sold out)
- I swapped basil for mint
- I used regular cherries
- I used a ready-made balsamic glaze
