Granola Fruit Tarts (Vegan)

It’s been a while since I made something sweet for my recipe index and with all the lovely summer fruits now in season, a fruit tart seemed an obvious choice.

This tart has a crunchy granola base so you could even eat this for breakfast!  In fact, I wasn’t sure if the tart bases would hold together so I spread half the granola mixture on a baking sheet, baked for 7 minutes and then layered granola, custard and fruit in glasses – a good option if you don’t have small tart cases.

The custard is made with cashew milk as I wanted that extra creaminess but you could experiment with an alternative dairy free milk.

For the tart cases
  1. 100g jumbo oats
  2. 25g walnuts, finely chopped
  3. 25g shredded coconut
  4. 2 tbsp coconut oil, melted
  5. 2 tbsp maple syrup
  6. 1 tsp cinnamon
For the custard filing
  1. 250ml cashew nut milk
  2. 2 tbsp cornflour
  3. 2 tbsp maple syrup
  4. 1 tsp vanilla extract
  5. Pinch of turmeric (purely to give it a yellow colour)
Instructions
  1. Pre heat the oven to 170 C (335 F). Lightly grease your tart cases with a little coconut oil.
  2. In a bowl mix together the oats, nuts, shredded coconut and cinnamon.
  3. Mix together the melted coconut oil and maple syrup then pour over the oat mixture and stir well.
  4. Divide the oat mixture between the tart cases and press firmly into the bottom and around the sides.
  5. Bake for approx. 10 minutes or until golden brown.
  6. Meanwhile, make the custard.
  7. In a small bowl, blend a little of the cashew nut milk with the cornflour and turmeric until all the lumps have gone. Pour this and the rest of the milk into a saucepan.
  8. Add the maple syrup and heat gently, whisking frequently. The custard will slowly thicken as it heats up.
  9. When it reaches the desired consistency, taste and add more maple syrup if needed.
  10. Remove from the heat and transfer to a jug to cool.
  11. When you're ready to serve spoon the custard into the tart cases and top with fresh fruit.
Notes
  1. These tarts are best assembled just before serving otherwise the granola will turn soft.
